Beetroot & dill cured BC salmon sockeye gravlax, horseradish crème fraiche, fennel citrus slaw Or Velouté of roasted celery root, caramelized apples & goat cheese Or Foie gras & chicken liver parfait, apple jelly & croutons

2nd Course: 

Duo of duck breast & duck confit, lentil de Puy cassoulet, wilted spinach, toasted pine nuts, caramelized onion jus, fresh roasted figs & Roquefort cheese Or Wild mushroom risotto, grilled asparagus & Portobello, petite salade of frisée with sherry vinegar & truffle oil Or Pan seared Arctic Char, creamed leek, bacon lardons & Yukon gold mash potatoes, vermouth beurre blanc
